BANANA MUFFINS
3 large, ripe bananas
1 egg, beaten to blend
1 tsp baking soda
3/4 tsp salt
1/2 cup chopped walnuts
1 cup sugar
1 1/2 cups all-purpose
           flour
1 tsp baking powder
1/3 cup vegetable oil

Preheat oven to 375 deg.
Grease fifteen 2 1/2" 
muffin tins or line with
paper muffin cups. Mash
bananas in large bowl.
Mix in sugar and egg.
Sift flour, baking soda,
baking powder and salt.
Add to banana mixture in
3 batches alternately 
with oil. Stir in walnuts.
Fill prepared tins 2/3 
full.  Bake until golden
and tester inserted in
centers comes out clean,
25-30 minutes. Cool slightly
in tins on rack. Serve with
warm butter. Makes 15.
